Useful Products of Microbial Fermentation





Useful Products - Starting Materials - Micro organism employed

• Cheese, Yoghurt, butter - Milk - Lactic acid bacteria and some streptococci, e.g. Lactobacillus bulgaricus, streptococcus lactis

• Silage ( Cattle feed) - Fresh grass - Lactobacillus and streptococcus

• Soy sauce - Cooked soya beans and crushed wheat - Aspergilus oryza (mould) , lactic acid bacteria and yeast

• Bread - Dough (moistened wheat flour, cornflour, e.t.c.) - Saccharomyces cerevisiae ( Brewer's or bakers yeast)

•  Alcoholic Beverages
(i) Wine - Sugars in fruits juices - Saccharomyces cerevisiae

(ii) Beer - Sugars in malted barley - Saccharomyces cerevisiae

(iii) Palm wine - Sap of palm trees - Saccharomyces cerevisiae

(iv) Burukutu  - Guinea corn - Saccharomyces cerevisiae
